- Cook Time: 20 minutes
- Yield: 3-4 servings
- Dosha Impact: Pacifies Pitta and Vata perfectly. Neutral for Kapha in moderation.
Ingredients
- 1 cup organic Basmati rice (thoroughly washed and drained)
- 1 cup fresh or light coconut milk
- 1 cup pure water
- 1 tablespoon premium ghee or virgin coconut oil (deeply cooling fats)
- 1/2 teaspoon whole cumin seeds (assists with effortless digestion)
- 4-5 fresh curry leaves (highly anti-inflammatory and aromatic)
- 2 tablespoons unsweetened shredded coconut (fresh or dry shredded)
- A tight pinch of mineral salt or pink Himalayan salt
- Fresh cilantro leaves (finely chopped, for the cooling finish)
Cooking Instructions
1. Rinse the Rice: Wash the basmati rice in cool water, swirling with your fingers, until the water runs completely clear. Drain thoroughly and set aside.
2. Temper the Spices: Heat the ghee or coconut oil in a medium saucepan over medium-low heat. Add the cumin seeds and fresh curry leaves. Allow them to gently sizzle for 30 seconds until fragrant and golden, taking care not to burn them.
3. Toast the Rice: Add the drained basmati rice to the spiced oil. Gently stir for 1 minute to coat every grain of rice with the aromatic fat.
4. Add Liquids & Simmer: Pour in the coconut milk, water, and mineral salt. Bring the mixture to a gentle boil. Once boiling, immediately turn the heat down to the lowest setting, cover tightly with a lid, and let it simmer undisturbed for 15 minutes.
5. Steam & Fluff: Turn off the heat completely. Leave the lid on and let the rice steam in its own residual heat for an additional 5 minutes. Remove the lid and gently fluff the grains with a fork.
6. Garnish & Serve: Stir in the shredded coconut and top generously with fresh chopped cilantro. Serve warm or at room temperature alongside your cooling cucumber raita.
Summer-Cooling Squash Herb Medley
- 1 medium zucchini (shaved into thin ribbons or sliced into thin rounds)
- 1 medium yellow summer squash (shaved into thin ribbons or thin rounds)
- 1 tablespoon ghee or coconut oil (both are deeply cooling)
- 1/2 teaspoon fresh thyme (or a small pinch of dried thyme)
- 1/2 teaspoon fresh oregano (or a small pinch of dried oregano)
- 1/4 cup fresh mint leaves or cilantro (finely chopped)
- 1 tablespoon fresh lime juice (cooling alternative to lemon)
- A pinch of mineral salt
Prepare the squash: Use a vegetable peeler to shave the zucchini and yellow squash into long, thin ribbons, stopping when you reach the seedy core.
Warm the oil and herbs: Melt the ghee or coconut oil in a wide skillet over low heat. Add the thyme and oregano, letting them warm in the fat for just 10–15 seconds to release their flavor without overheating.
Flash-cook the squash: Toss the squash ribbons into the skillet with a pinch of salt. Gently fold them in the herbed oil for only 1 to 2 minutes. You want them to just soften slightly while remaining crisp, bright, and full of hydrating moisture.
Cool and garnish: Remove the skillet from the heat entirely. Toss in the fresh mint (or cilantro) and drizzle with the fresh lime juice.
Serve: Enjoy warm or let it rest until it reaches room temperature for an extra cooling effect.
Prep Time: 10 minutes | Cook Time: 2 minutes | Servings: 2–4
Dosha Impact: Strongly pacifies Pitta and Vata. Lightly stimulates Kapha.
Cucumber Raita
- 1 large organic cucumber (peeled and grated)
- 1 cup plain, organic whole-milk yogurt (fresh is best)
- 1/4 cup pure water (to thin and lighten the dairy)
- 1 teaspoon ghee or organic coconut oil
- 1/2 teaspoon whole cumin seeds
- 4–5 fresh mint leaves or cilantro sprigs (finely chopped)
- 1 tiny pinch of mineral salt or rock salt
1. Prepare the Cucumber: Grate the peeled cucumber using a box grater. Gently press out a tiny bit of excess water with your hands, but leave most of it to maximize refreshing summer hydration. Place the grated cucumber into your main serving bowl.
2. Whisk the Yogurt: In a separate small mixing bowl, vigorously whisk the 1 cup of plain yogurt with 1/4 cup of water. Whisk thoroughly until it transitions into a light, fluid, and completely smooth consistency. Pour this thinned yogurt directly over the grated cucumber.
3. Temper the Spices (The Tarka): Heat your ghee or coconut oil in a small pan over medium-low heat. Drop in the whole cumin seeds. Allow them to sizzle and toast for roughly 30 seconds until they turn a rich golden-brown color and release an intensely aromatic aroma. Take immediate care not to burn them.
4. Combine and Infuse: Pour the hot, spiced oil and toasted cumin seeds directly into the cucumber and yogurt bowl. It will sizzle pleasantly upon contact, instantly infusing the dairy with digestive warmth.
5. Garnish and Serve: Toss in the fresh chopped mint or cilantro leaves and a small pinch of mineral salt. Gently stir all the ingredients together. Serve at a comfortable room temperature or slightly cool, keeping in mind that Ayurveda advises against ice-cold dishes which freeze the digestive fire.
Ayurvedic Energetic Notes
• Whisking with Water: Commercial yogurt can block the body’s subtle channels (Srotas) because it is inherently heavy and clogging. Splitting it with water changes its molecular density, rendering it highly bioavailable.
